Extra Virgin Olive Oil from Organic Olives
“Il Prato” produces premium quality extra virgin olive oil, extracted from the fruit of the 1400 olive trees that surround the main estate, planted on the small patches of level ground and antique terraces that are so typical of the beautiful Tuscan landscape.
Every year we prune and fertilise the olive trees using the most appropriate agricultural techniques.
From the end of October we take the ripe olives to the mill, within 48 hours of harvesting them, and there we extract a very high quality extra virgin olive oil (very low acidity and peroxides and very high in polyphenols and tocopherols).
